Cynara scolymus L. (artishok) O‘rta Yer dengizi hududida tabiiy tarqalgan ko‘p yillik dorivor o‘simlik bo‘lib, uning kimyoviy tarkibi polifenollar, flavonoidlar, fenolik kislotalar hamda inulin kabi biologik faol birikmalarga boyligi bilan ajralib turadi. Mazkur komponentlar o‘simlikning kuchli antioksidant, gepatoprotektiv va biologik faollik xususiyatlarini shakllantiradi.Hozirgi vaqtda artishok tarkibidagi bioaktiv moddalarni aniqlash va ajratib olish jarayonlarida zamonaviy biotexnologik hamda analitik yondashuvlar keng qo‘llanilmoqda. Shu bilan birga, o‘simlik xomashyosidan samarali foydalanish va fenolik birikmalar chiqishini oshirish maqsadida yashil ekstraksiya texnologiyalariga alohida e’tibor qaratilmoqda.Mazkur tezisda Cynara scolymus L. o‘simligining fitokimyoviy tarkibi hamda bioaktiv komponentlarni olishga doir zamonaviy biotexnologik imkoniyatlar yoritiladi.
