Abstract

Go’sht mahsulotlarining gigiyenik xavfsizligi oziq-ovqat sanoatining eng dolzarb masalalaridan biridir. Bakterial kontaminatsiya go’shtning saqlash muddati, sifat ko’rsatkichlari va inson salomatligiga bevosita ta’sir ko’rsatadi. Patogen mikroorganizmlarning ko’payishi oziq-ovqatdan kelib chiqadigan kasalliklar xavfini oshiradi. Shu sababli, go’shtdagi mikroflorani aniqlash va morfologik o’rganish veterinariya-sanitar ekspertizada muhim o’rin tutadi.
